Description
A large-format book to fully appreciate the LYST restaurant, located in the iconic Fjordenhus building in Vejle, Denmark. This extraordinary establishment was created in close collaboration with Studio Other Spaces, Olafur Eliasson, and Sebastian Behmann.
The menu changes daily, depending on various factors (weather, season, etc.) and includes twenty locavore sequences based on the four elements of air, fire, water, and earth, in a nearly four-hour culinary experience.
Since September 2021, Lyst has been awarded one MICHELIN star and one MICHELIN green star for gastronomy and sustainability.
